Cider mop

Swabbed on every hour, for ribs and shoulder
You need
- 2½ dl apple cider
- 125 ml cider vinegar
- 2 msk brown sugar
- 1 tsk coarse salt
A mop is not a glaze. It is mostly water, and the point is evaporation: a wet surface stays cooler than the air around it, which is what keeps a shoulder from setting hard before the collagen has had time to give up.
Warm it, and swab once an hour from hour three. Not before: the bark needs to set first, and mopping a raw surface just washes the rub off.
Every time the lid comes off you lose twenty minutes. If you cannot do it in under fifteen seconds, do not do it at all.
